Deli Sandwich with Fresh Guacamole

Deli Sandwich with Fresh Guacamole

A great deli sandwich is all about the build: turkey, ham, and provolone on a sturdy Costco ciabatta roll or whole wheat pita pocket, with a Dijon and Greek yogurt spread, crisp romaine, thin cucumber, tomato, and red onion — then a generous scoop of fresh guacamole that does the work of mayo and adds creaminess. The guacamole is a chunky, lime-forward recipe that stays bright green when stored with plastic wrap pressed onto the surface. Set everything out and let everyone build their own.

Ingredients

  • Costco ciabatta rolls or whole wheat pita pockets
  • Deli turkey (4 oz per Him & Son, 2½ oz per Her)
  • Deli ham (1½ oz per Him & Son, 1 oz per Her)
  • Provolone (1 oz per Him & Son, ¾ oz per Her)
  • Spread (per sandwich)
  • ½ tbsp Dijon mustard
  • ½ tbsp Chobani non-fat plain Greek yogurt
  • Fillings
  • Romaine or green leaf lettuce
  • Thin cucumber slices
  • Sliced Roma tomato
  • Thin red onion
  • Guacamole
  • 3 ripe avocados, fork-mashed (leave chunks)
  • ½ red onion, finely diced
  • 1 Anaheim chili, minced
  • Generous fresh cilantro
  • Juice of 3 limes
  • Salt
  • (batch is about 540 cal, roughly 27 cal per tablespoon)

Preparation

  1. Fork-mash the avocados, leaving some chunks, and stir in the red onion, Anaheim chili, cilantro, lime juice, and salt.
  2. To store leftover guacamole, press plastic wrap directly onto the surface and add a little extra lime juice.
  3. Mix the Dijon and Greek yogurt.
  4. Set out the rolls or pitas, deli meats, provolone, spread, vegetables, and guacamole and build at the table.
  5. Set aside extra deli components and guacamole for the next day’s salad bowl over spring mix.
