Bacon Cheeseburger + Sweet Potato Oven Fries + Spring Mix Salad

Sweet potato fries start 30 minutes before the burgers — that’s the only timing coordination this meal needs. Cut the sweet potatoes into ½-inch wedges, toss in olive oil, smoked paprika, garlic powder, and salt, single layer on a sheet pan at 425F for 28–30 minutes flipping once. They caramelise naturally. Meanwhile, the patties: beef is reduced slightly to compensate for bacon, shaped loosely without compressing, seasoned on the outside only, and cooked in a screaming hot cast iron pan — 3 minutes per side, no pressing. Pressing squeezes out all the juice. Reduced-fat cheddar melts in the last 30 seconds. The burger spread is half Dijon mustard and half Chobani non-fat — slightly tangy, slightly creamy, about 20 calories per tablespoon. A small spring mix side with cherry tomatoes and a light lemon vinaigrette rounds it out. Make an extra patty — Next Day’s lunch is the crumble bowl.

Ingredients

  • ~1.25 lbs 90% lean ground beef (for 6 patties)
  • Salt and black pepper (season outside only)
  • 1 pack centre-cut bacon (3 strips Him/Son, 2 strips Her)
  • 1 pack reduced-fat cheddar slices (1 slice each Him + Son, ½ slice Her)
  • 1 pack WW hamburger buns
  • Romaine, sliced tomato, red onion, dill pickles
  • Light cooking spray
  • Dijon-Yogurt Spread
  • ½ tbsp Dijon mustard + ½ tbsp Chobani non-fat mixed together (per bun)
  • Sweet Potato Oven Fries
  • 3–4 medium sweet potatoes, cut into ½-inch wedges
  • 1 tbsp extra virgin olive oil
  • Smoked paprika, garlic powder, salt
  • Spring Mix Side
  • Baby spring mix + cherry tomatoes + light lemon vinaigrette (1 tsp olive oil + lemon juice + salt)

Preparation

  1. Start sweet potato fries first — they take 30 minutes. Toss wedges in olive oil, paprika, garlic powder, and salt. Spread in a SINGLE LAYER — crowding steams instead of caramelising. 425°F 28–30 minutes, flip halfway.
  2. Cook bacon separately in the 425°F oven for 20 minutes, flipping after 10 minutes, works great. Set aside.
  3. Form beef into flat patties. Season the outside with salt and pepper only. Heat cast iron over high heat until smoking. Spray lightly. Place beef in the pan. Cook 3 minutes. Flip once. DO NOT press during cooking. Place cheddar on top for the last 2 minutes and cover to help melt faster. Rest 1 minute.
  4. Toast buns cut-side down in the same pan 30 seconds. Spread with Dijon-yogurt mix.
  5. Build with romaine, tomato, red onion, bacon, and pickles.
  6. Dress the spring mix side lightly with lemon vinaigrette.
  7. Pack the extra patty whole for Saturday.
