23 Weeks In, Still 232: Why a Three-Week Plateau Doesn’t Scare Me

23 Weeks In, Still 232: Why a Three-Week Plateau Doesn’t Scare Me

Alright, let’s be upfront: the scale has been about the same for three weeks in a row. 233, 231, 232. If you’re one of the people on the internet who loves to pile onto weight loss content creators, this is your moment. You could say the diet isn’t working. You could say Claude isn’t helping. You’d be wrong, but you could say it.

Here’s why this doesn’t worry me. The plan is working over 23 weeks — 35 pounds down from 267 is real. A plateau in any three-week window within a 52+ week journey is not a crisis, it’s a data point. And honestly, a few culprits were identifiable this week. The chicken wings, which were absolutely the highlight of the week (buffalo sauce, biscuits made with wheat flour and powdered milk — wonderful), may have pushed me slightly over. The eggplant parm was a worthy dish but I may have eaten a portion and a half instead of one. The California beef noodles (加州牛肉面 — not a real dish in China, but Happy Healthy Wife’s version is excellent) used some fatty beef fingers from Weee! that probably added up. Small things. Noted.

The rest of the week was genuinely good. Ginger scallion chicken in pita with cucumbers and tomatoes — Happy Healthy Wife loved it, Happy Healthy Son came around once he stopped eating the chicken alone and combined it with the cucumbers as intended. Dan dan noodles (担担面) with turkey instead of pork and wheat noodles were solid. Shrimp scampi was slightly off this time — possibly the switch from fresh to dried dill. Honey Dijon pork was a touch too salty through my own error.

While cooking this week’s salmon (400°F, lemon juice, garlic powder, dill, salt, 12-15 minutes — the dish that just keeps delivering), I was also making the three-layer jello for Memorial Day weekend. Fresh blueberries in the bottom layer and fresh raspberries in the top layer, a creamy milk-gelatin middle, and this time I swapped the sugar in the middle layer for monk fruit sweetener — saving about 30 calories per slice across 12 portions. Small modification, same great jello. The grandma’s lime jello with cottage cheese and pineapple that I grew up loving unfortunately did not survive contact with Happy Healthy Wife and kids, so that one stays a fond memory.

The bigger point this week is about sustainability. Fad diets — keto, Atkins, eating only half of what you normally eat — work for a while and then stop working, because they’re built on restriction so severe that going back to normal feels inevitable. And when you go back to normal, your old habits — the same ones that caused the weight gain in the first place — pick right back up. This is not that. We eat chicken wings with real butter buffalo sauce. We eat bacon cheeseburgers and eggplant parm. We eat dishes we’ve been cooking for years. We just eat less of them and swap a few things out. That’s a plan you can run for the rest of your life. That’s the point.

Next week is maintenance week — up to about 2,500 calories, Labor Day barbecue with a bacon cheeseburger, hot dogs, and sweet potato fries. Then back on the deficit. Still 65 pounds from goal. Still going.

The Meal Plan that Claude Created for Week 23:

WEEK 23 — AI DIET MEAL PLAN

DEFICIT WEEK · 3 QUICK NIGHTS

===================================

ABOUT THIS WEEK

Week 23 front-loads the fast nights so the back half of the week can be the fun stuff. Monday is dan dan turkey noodles — 25 minutes if the water goes on the moment you walk in. Tuesday is honey dijon pork chops, 10 minutes if they were marinated in the morning. Wednesday is ground beef soft tacos with homemade pico de gallo, quick enough that Son is still at the table for dinner before heading out around 6:45. After he leaves Wednesday, the eggplant parmesan gets assembled leisurely — no rush, no clock pressure — and goes straight into the fridge. Wife bakes it Thursday. Friday is bacon cheeseburger night with sweet potato oven fries. Saturday is Feast Night: air fryer buffalo wings, your homemade biscuits, and a Greek yogurt oil-vinegar coleslaw made that morning. Every dinner feeds lunch the next day. No extra prep ever needed.

Note: Sunday dinner uses leftover rotisserie chicken from the week prior — use it up.

CALORIE TARGETS

Him:  1,940–2,127 kcal/day

Her:  1,330–1,410 kcal/day

Son:  same as Him (present all meals except leaves Wednesday ~6:45 PM)

This week runs 4 meals + dessert per day — Breakfast / Lunch (leftover) / Snack / Dinner / Dessert.

Saturday Feast Night runs higher by design — lighter breakfast and lunch that day offset the wings and biscuit dinner.

STANDING RULES

– Every dinner makes enough for the next day’s lunch — cook double, pack before eating.

– Son leaves Wednesday around 6:45 PM — dinner is done before he goes.

– After Son leaves Wednesday: leisurely eggplant parm assembly. No rush. It goes in the fridge overnight.

– Wife bakes the eggplant parm Thursday — zero prep needed that evening.

– Dan Dan noodles: water goes on the pot THE MOMENT you walk in Monday.

– Honey Dijon pork chops: marinate morning of Tuesday (or Sunday night) — 10 min cooking when home.

– Buffalo wings: simmer in water first, then air fryer 400F 25–28 min — that’s what makes them crispy.

– Coleslaw: make Saturday morning, needs 30 min minimum fridge time to soften and meld.

– Standing snack: Laughing Cow wedges + Wasa rye crispbread + fresh fruit. Him & Son: 3 wedges + 2 crackers. Her: 2 wedges + 1 cracker. (Sunday snack day.)
