When I first tried this recipe as part of my Super Bowl Watching Party spread, I was very delighted with the results of the flavor. Though Happy Healthy Daughter disagrees, the flavor of this guacamole beat the pants off of all those store bought packets that I usually used. I was amazed by the freshness and how enjoyable the guacamole tastes. I felt it tasted even better than the guacamole that I get served in restaurants.
Then I packaged it up and put it in the refrigerator for the next day like normal and low and behold to my surprised eyes, when I opened the refrigerator the next day, I did not see any browning whatsoever. A complete shock since all those store bought packets of sauce always left the guacamole brown and tasting flat the next day. But don’t take my word for it, try it for yourself.
Ingredients
- 3 Avocados
- 1 cup cilantro
- 1/2 red onion, diced
- 1 Anaheim chili, diced
- 2 key limes
- 1 tomato, chopped
- 1 teaspoon Salt

Preparation
- Use a mortar and pestle or food processor to grind up the Anaheim chili, red onion and cilantro to a fine paste. Transfer to a mixing bowl.
- In the mixing bowl, place the peeled and deseeded avocado and mash up the avocado with a pastry cutter or a fork until it’s smashed to your liking. For an extra creamy guacamole use a hand mixer.
- Squeeze the lime juice and add 1 teaspoon of salt to the mixture and stir well.
- If desired, chop up a tomato and stir it to combine.
- Eat with your favorite chips.
