After 15 weeks of doing this I’ve had some time to think about what’s actually made the difference. Not the meal plan itself, not any single dish or swap — but the three things underneath all of it that made it possible to keep going week after week.
Number one: a nutritionist. Mine is Claude AI. What a nutritionist does — human or AI — is take the foods you already love and figure out how to make them work within your goals. I’m not eating a pre-packaged plan that tells me to eat foods I don’t recognize. I’m eating tri-tip, steak fajitas, bacon cheeseburgers, and eggplant dishes I’ve been cooking for years — just modified. Less fat here, a different grain there, portion adjusted. That’s what a good nutritionist does, and that’s what Claude has been doing for 15 weeks straight.
And by the way — a diet bacon cheeseburger is a real thing. 93% lean beef so there’s barely any fat dripping on the grill, center cut bacon which is leaner, skip the mayo or use a thin spread, wheat bun instead of white. You still get a bacon cheeseburger. You don’t get the 1,400 calories you’d rack up at In-N-Out with a Double Double, fries and a shake. That’s nearly an entire day’s worth of calories in one meal. Cook it at home, control what goes in it.
Number two: determination and self-control. This is the hard part nobody wants to talk about. The nutritionist tells you what to eat. You still have to stop eating when the portion is done even when you could eat more. Every single meal, every single day. Some days are easier than others. Some days you skip lunch and the hunger hits harder at dinner. That’s when self-control matters most.
Number three: support. For me that’s Happy Healthy Wife — cooking together, eating the same foods, going through the same journey side by side. Having someone in it with you makes the hard days easier and the wins more worth celebrating.
As for where things stand: 25 pounds down, sitting at around 242. Twenty-six years of continuous weight gain, and we’re going the other way now. If I can hold this pace — roughly 25 pounds every 15 weeks — I’ll be at my post-college weight within a year. I haven’t seen that number on the scale since 2000. That’s the goal.
Week 16 is a maintenance week — surf and turf, Tuscan stuffed chicken, crockpot pork chops, diet pizza, mapo tofu, and dan dan mian made with protein noodles. Happy Healthy Wife found protein noodles and I asked Claude how to work them into the dish. We’ll see how it goes.
