Down to 233, closing in on 35 pounds lost. And I want to talk about something this week that I’ve been sitting with for a while: exercise didn’t do this.
Last summer I started walking four miles every morning — not for weight loss, originally, but because my hip was bothering me and walking helped. After a few weeks of consistent four-mile mornings, I stepped on the scale expecting to see progress. Nothing. I was exercising more than I ever had and the weight wasn’t moving.
I started noticing the same thing in my neighbors. There’s Phil — retired, walks every day, sometimes bikes, sometimes plays pickleball. Dad bod, just like me. And Jill, who I’ve watched running every morning for years now. Not short runs either. And yet neither of them looks like what you’d expect from someone exercising that consistently. That got me thinking: are the thin runners I see thin because they run, or are they running because they’re already thin? I genuinely don’t know.
What I do know is the math. Four miles of walking burns about 280 calories. Running a full 5K burns maybe 360 to 480 depending on your weight and pace. That’s roughly one Big Mac. Not the meal — just the burger. Or a large fry. If you add a milkshake, you just went backwards. Exercise is not a calorie-burning machine at the level most people assume.
Here’s the other insight that crystallized for me this week: a diet is not something you do and then stop. That thinking — “I’ll diet down to my goal weight and then eat normally again” — is what gets people back to where they started. My “normal” eating is what got me to 267 pounds in the first place. If I go back to it, I’ll go right back up. When I hit my goal weight, the plan doesn’t stop — it just shifts from deficit mode to maintenance mode. Same foods, slightly higher portions. That’s it.
The caprese chicken sandwich this week was decent — balsamic glazed rotisserie chicken, fresh basil, mozzarella, tomato, alfalfa sprouts, all on toasted Costco artisan bread. Happy Healthy Daughter requested it and it did not disappoint. The deli sandwich from last week remains a personal favorite. The honey garlic shrimp was good but probably not a traditional Chinese dish — didn’t find it on a single Chinese food website. Doesn’t matter, still tasty. The golden curry was a swap-in for the California beef noodles that got bumped to next week, and it landed somewhere in the middle — fine, not a highlight.
BMI note worth mentioning: at 233 and six feet tall, I’m still technically in the obese range. I need to get below 220 to reach “overweight” and below 185 to hit “healthy.” My goal of 165 is right in the healthy zone. Long way to go. Still going.

HAPPY HEALTHY WIFE 🥦 MAN vs. AI WEIGHT LOSS Week 21 Meal Plan | Stater Bros Sale Week 🔥 CALORIE DEFICIT WEEK · 6 Great Dinners — Sunday Off 🔥
===============================================================
ABOUT THIS WEEK
—————
Week 21 is a deficit week built around a Stater Bros sale — bone-in chicken thighs at $1.49/lb, raw white shrimp 2 lbs for $10, and pasta 2 for $3 made this one of the best value weeks in the whole plan. Sunday is a free day (eating out or simple assembly — no cooking), which means Monday kicks off the leftover loop fresh. Highlights include a slow-simmered Chinese beef finger meat noodle soup that transforms the broth over 1½–2 hours, a honey-garlic shrimp with bacon-garlic green beans that photographs like it came from a restaurant, and a guacamole batch made Wednesday night that carries across Wednesday dinner, Thursday breakfast toast, and Thursday lunch — your recipe, zero waste.
Shopping: Stater Bros + Costco + Weee (Asian market) + Asian grocery
CALORIE TARGETS
—————
Her: ~1,215 – 1,400 kcal/day | 2/8 of every dish
Him: ~1,772 – 1,982 kcal/day | 3/8 of every dish
Son: ~1,772 – 1,982 kcal/day | 3/8 of every dish (same as Him)
STANDING RULES
————–
– Sunday is no cooking — eating out or simple assembly
– Guacamole plan: make full batch Wednesday night, use across Wed dinner
+ Thu breakfast avocado toast + Thu lunch pita bowl; press plastic wrap
directly onto surface + squeeze extra lime juice to store overnight
– Baked Ziti: drain ALL hot sausage fat into separate container, then
blot with paper towels — removes most of the extra calories vs turkey
– Bone-in chicken thighs: cook SKIN ON at 425°F (keeps meat moist and
bastes itself) — REMOVE skin before eating to reduce calories
– Beef noodle soup: LOW simmer 1½–2 hours minimum; the broth transforms
with time — patience makes this dish extraordinary
– Shrimp: pat COMPLETELY DRY before searing — moisture prevents the
honey-garlic glaze from caramelizing
– Stater Bros deal this week: chicken thighs $1.49/lb · shrimp $10/2lb ·
pasta 2/$3 · provolone $8.99/lb · Outshine bars $3.90 digital
